Samgyetang — whole young chicken stuffed with rice, ginseng and jujubes

Samgyetang is ginseng chicken soup, and in Korea it is the traditional remedy for the hottest days of summer. On the three dog days, people line up for bowls of whole young chickens stuffed with sweet rice, ginseng, and jujubes, simmered until the meat falls from the bone. The belief is that heat is best fought with heat, and the soup is famously restorative. It is warming, calming, and the ultimate Korean comfort soup.

Tender chicken, fragrant rice, golden broth

The broth is golden and clean, perfumed with garlic, ginseng, and the faint sweetness of jujubes, and the chicken is so tender it nearly dissolves. The rice inside is soft and infused with the juices, and a dip of salt, pepper, and sesame makes every bite shine. Step by stepInstructions

  1. Rinse the chickens inside and out and pat them dry.
  2. Divide the rice, ginseng, jujubes, and garlic evenly and stuff each chicken cavity. Close the openings with toothpicks or kitchen twine.
  3. Put the chickens breast side up in a large pot with the ginger and water. Bring to a boil, then lower to a gentle simmer.
  4. Cover and simmer for 1 hour 30 minutes, until the meat is falling off the bone.
  5. Season the broth with the salt and pepper, and add the scallions for the last 5 minutes.
  6. Serve each chicken whole in a bowl with the broth ladled over it, with salt and pepper on the side for dipping the meat.

💡 Chef tips & storage

Soak the sweet rice for at least 1 hour before stuffing so it cooks through with the chicken. Do not overfill the cavity; the rice swells as it cooks.
