Samoan Koko Alaisa

Koko alaisa is Samoa’s comfort breakfast: rice simmered until soft in coconut milk, sweetened and enriched with dark Samoan cocoa. It is the meal grandmothers make on cool mornings and after church, often cooked in big pots for the whole family.

The bittersweet cocoa cuts the coconut’s richness perfectly, and the soft, porridgey rice makes it deeply soothing. Sweeten to your taste and eat it warm, maybe with a slice of fresh papaya.

Step by stepInstructions

  1. Rinse the rice and place in a pot with the water. Bring to a boil, then reduce to a simmer, cover and cook for 15 minutes.
  2. Add the coconut milk, cocoa, sugar, salt and vanilla. Stir well, breaking up any lumps of cocoa.
  3. Simmer uncovered for 10-15 minutes, stirring often, until the rice is very soft and the porridge is thick and creamy.
  4. Taste and add more sugar if needed. Serve warm in bowls.

💡 Chef tips & storage

Use a good-quality pure cocoa for the deepest chocolate flavour — Samoan koko is traditionally roasted and unsweetened. Stir frequently so the coconut milk doesn't catch on the bottom.
