Sancocho Venezolano

Sancocho is the great stew of Latin America, and Venezuela’s version is a big, generous pot of beef and chicken simmered with yucca, ñame, potatoes, green plantain, and corn. It is the dish you call your mother about when you feel under the weather, served with rice, avocado, and a squeeze of lime.

A whole pot of comfort

The broth is rich and lightly herbal, infused with cilantro and garlic, while the vegetables turn meltingly tender and the meats fall off the bone. Every bowl is a little different — a piece of corn here, a chunk of yucca there — and that is exactly the point.

Step by stepInstructions

  1. Place the beef in a large pot with 10 cups of water and 1 tsp salt; bring to a boil, skim the foam, and simmer partially covered for 45 minutes.
  2. Add the chicken, onion, garlic, and cumin and simmer 20 minutes more.
  3. Add the yucca, ñame, potatoes, plantain, and corn and simmer 25 to 30 minutes until the vegetables are tender and the meats are falling apart.
  4. Stir in the cilantro, taste, and adjust the salt.
  5. Serve piping hot in deep bowls with white rice, avocado slices, and lime wedges on the side.

💡 Chef tips & storage

Do not stir the pot too much once the yucca goes in, or it will cloud the broth; peel yucca carefully — it has a waxy, toxic layer that must be removed. The sancocho keeps 3 days in the fridge and only gets better overnight.
