Sardinhas assadas are the taste of Portuguese summer — fresh sardines grilled over charcoal until the skin blisters and blackens, served with roasted peppers and boiled potatoes. In June, Lisbon fills with the smoke and scent of them, and no table is complete without a plate.
The charm is honesty: good sardines need little more than coarse salt and fire. Eat them with your hands, pulling the silvery meat from the bone, with a squeeze of lemon and plenty of crusty bread to catch the juices.
