  1. Brown the sausage slices in a Dutch oven over medium heat; remove and set aside.
  2. Melt the butter in the same pot and cook the onion until soft, about 4 minutes.
  3. Add the sauerkraut, broth, caraway, bay leaf, pepper, and apple if using; simmer 10 minutes.
  4. Return the sausage to the pot and simmer 15 minutes more until the flavors meld.
  5. Discard the bay leaf and serve hot with mustard and crusty bread.
