Creamy seafood chowder with haddock, scallops, shrimp and mussels, with crusty bread

When a Maritime fish supper is on, this is the chowder that shows up: the fisherman’s pot tradition carried to its grandest conclusion. Every coastal community has its own version, but the heart is the same — whatever came off the boat that morning, simmered with potatoes in a creamy broth until the kitchen smells like the wharf.

This one goes all in, with haddock, scallops, shrimp and mussels so every spoonful brings something different. It is the chowder for celebrations — the pot you make when you want people to remember the meal.

Step by stepInstructions

  1. Cook the diced bacon in a large pot until crisp, then add the onion and potatoes and cook for 5 minutes.
  2. Sprinkle in the flour and stir for 1 minute, then pour in the milk and cream and bring to a gentle simmer.
  3. Simmer for 12 minutes until the potatoes are tender, stirring often.
  4. Add the haddock, scallops and shrimp and simmer gently for 5 minutes until the fish flakes and the shrimp turn pink.
  5. Add the mussels and cook until they open, about 3 minutes, then season with salt and pepper.
  6. Discard any unopened mussels, stir in the parsley, and serve piping hot.

💡 Chef tips & storage

Feel free to swap in whatever the fishmonger has — halibut, pollock or lobster all work. Do not let it boil after the cream goes in, and give it a rest overnight if you can; it only improves.
