Seafood gumbo is the Creole gumbo of the coast — shrimp, crab, and okra simmered in a rich, smoky roux broth with the holy trinity. It’s the gumbo of the French Quarter, served dark, deep, and loaded with the Gulf’s best.

Step by stepInstructions

  1. Make a dark roux: heat the oil, whisk in the flour, and cook, stirring constantly, until deep brown, about 15 minutes.
  2. Add the onion, bell pepper, and celery and cook 5 minutes. Add the garlic and okra and cook 5 minutes more.
  3. Pour in the stock and add the Cajun seasoning, thyme, and bay leaves. Simmer 45 minutes.
  4. Add the shrimp and crab and simmer 10 minutes more, until the shrimp are pink.
  5. Season with salt, pepper, and hot sauce. Remove the bay leaves and serve over rice.

💡 Chef tips & storage

Keep the seafood for the last 10 minutes so it stays tender. Okra thickens the gumbo naturally — trim and slice it evenly, and skip filé if you use okra.
