Shrimp and grits is the great dish of the Southern coast — plump shrimp sautéed with bacon and garlic in a rich pan sauce, served over creamy stone-ground grits. It started as a Lowcountry fisherman’s breakfast and became a fine-dining classic.

Step by stepInstructions

  1. Cook the grits in the water with salt, whisking often, 20-25 minutes until creamy. Stir in the milk, butter, and cheddar.
  2. Cook the bacon in a large skillet until crisp. Remove with a slotted spoon, leaving the drippings.
  3. Season the shrimp with salt, pepper, and cayenne. Sauté in the bacon drippings 2 minutes per side until pink. Add the garlic and cook 30 seconds.
  4. Return the bacon, add the lemon juice and green onion, and toss.
  5. Serve the shrimp over the grits.

💡 Chef tips & storage

Cook the grits low and slow for creaminess, and keep the shrimp slightly undercooked — they finish in the pan. The bacon drippings are the flavor base, so don't waste them.
