Shrimp étouffée is the Creole classic that means ‘smothered’ — plump shrimp simmered in a rich, tomato-kissed roux sauce with the holy trinity, spooned over white rice. It’s the quicker cousin of crawfish étouffée and just as beloved.

Chef Emily presents Shrimp Etouffee

Smothered shrimp, the Creole way

Plump shrimp simmered in a rich, tomato-kissed Creole roux sauce until tender, served over rice.

Step by stepInstructions

  1. Melt the butter in a large pot and whisk in the flour. Cook the roux, stirring, until light golden, about 6-8 minutes.
  2. Add the onion, bell pepper, and celery and cook 5 minutes. Add the garlic.
  3. Stir in the tomatoes, stock, Cajun seasoning, cayenne, and Worcestershire. Simmer 15 minutes.
  4. Add the shrimp and cook 5-6 minutes until pink and just cooked through. Season with salt and pepper.
  5. Serve over rice, garnished with green onion.

💡 Chef tips & storage

Don't overcook the shrimp — add them last and cook just until they turn pink. Serve with a generous ladle of sauce over rice.
