Skillet cornbread is the Deep South’s daily bread — a golden, crusty cornbread baked in a screaming-hot cast-iron skillet so the edges turn crisp and the middle stays tender. It’s the side for greens, beans, chili, and just about everything else.

  1. Heat the oven to 425°F (220°C). Place the butter in a 10-inch cast-iron skillet and put it in the oven to melt.
  2. Whisk the cornmeal, flour, sugar, baking powder, and salt. In a separate bowl, whisk the buttermilk, eggs, and oil.
  3. Combine the wet and dry ingredients until just mixed.
  4. Swirl the melted butter in the hot skillet, pour in the batter, and bake 20-25 minutes until golden and crisp at the edges.
  5. Cool 5 minutes before slicing.

💡 Chef tips & storage

Heat the skillet with the oil in the oven until smoking before adding the batter — that sizzle makes the crust. A few lumps in the batter are fine.
