Smoked barbecue ribs are the heart of Texas barbecue — pork ribs rubbed with a smoky spice blend, smoked low and slow until the meat pulls cleanly from the bone, then brushed with a sticky glaze. St. Louis or baby back, they’re a cookout centerpiece.

Dry-rubbed pork ribs smoked until tender and brushed with a sticky Texas barbecue glaze.

Step by stepInstructions

  1. Remove the membrane from the back of the ribs. Mix the brown sugar and spices and rub generously over both sides.
  2. Set up your smoker at 250°F (120°C) with wood of your choice (hickory or oak).
  3. Place the ribs bone-side down and smoke, spritzing with apple juice every hour, for about 4 hours.
  4. Brush the ribs with barbecue sauce and continue smoking 1 hour more, until the meat is tender and pulls back from the bone.
  5. Rest 15 minutes, slice between the bones, and serve with extra sauce.

💡 Chef tips & storage

Remove the membrane from the back of the ribs before smoking so the rub penetrates. Spritz with apple juice every hour and skip the wrap for a firmer, more traditional Texas bite.
