Step by stepInstructions

  1. Cook the bacon in a large pot until crisp; remove, leaving the fat.
  2. Cook the onion in the fat until soft, about 4 minutes; add the garlic and cook 1 minute.
  3. Add the cabbage in batches, stirring, then the broth, salt, pepper, and red pepper flakes.
  4. Cover and simmer 25-30 minutes, stirring occasionally, until the cabbage is very tender.
  5. Uncover and cook 5 minutes more to reduce; stir in the butter, vinegar, and bacon. Serve hot.

💡 Chef tips & storage

The longer it simmers, the sweeter it gets. The vinegar at the end brightens everything — don't skip it.
