Solyanka

Solyanka is a brash, bracing soup — a rich broth crowded with assorted meats, pickles, olives, and capers, with a sour-salty kick that wakes up the whole table. It is the boldest member of the Russian soup family.

Often finished with a slice of lemon and a spoonful of sour cream, solyanka is the classic cure for cold weather and long meals. The more kinds of meat and pickle you add, the deeper it gets.

Step by stepInstructions

  1. Sauté the onion in a little oil until golden; stir in the tomato paste and cook for 2 minutes.
  2. Add the broth, bay leaf, pickles, and brine; simmer for 15 minutes.
  3. Add the beef, ham, and sausage; simmer for 10 minutes more.
  4. Stir in the olives and capers and heat through.
  5. Serve piping hot with a lemon slice, sour cream, and dill.
