Sonoran enchiladas use a thin, bright chile sauce and lots of melty cheese — simple, saucy, and satisfying.

Step by stepInstructions

  1. Soak the chiles in hot water 30 minutes, then blend with the water, garlic, salt, and cumin until smooth.
  2. Simmer the sauce 10 minutes in a saucepan.
  3. Fry each tortilla briefly in hot oil to soften; drain.
  4. Dip each tortilla in the sauce, layer in a baking dish with cheese and onion, and repeat.
  5. Pour the remaining sauce over the top and finish with the last of the cheese and Parmesan.
  6. Bake at 375°F for 15-20 minutes until bubbly. Rest 5 minutes before serving.
