Sopa de Mondongo Panameña

A traditional Panamanian soup — Sopa de Mondongo Panameña is a robust, slow-simmered tripe soup that is practically a meal in itself. Honeycomb tripe is boiled until tender, then simmered with ñame, yuca, green plantain and cabbage in a broth scented with garlic, cumin and culantro. It is the soup Panamanians crave on rainy days, finished with a squeeze of lime.

Step by stepInstructions

  1. Boil the tripe in a large pot of salted water for 30 minutes; drain, rinse and cut into smaller pieces.
  2. In the same pot, heat the oil and cook the onion, garlic and bell pepper until soft, about 5 minutes; add the tripe, cumin, oregano, salt and pepper.
  3. Pour in the water or broth, bring to a boil, then simmer covered until the tripe is tender, about 1 hour.
  4. Add the ñame and yuca and cook 15 minutes, then add the plantain and cabbage and simmer until all are tender, about 15 more minutes.
  5. Stir in the culantro, simmer 5 minutes, adjust the seasoning and serve hot with lime wedges and white rice.

💡 Chef tips & storage

Tripe must be simmered until truly tender — when in doubt, cook it longer. Clean it well and blanch it first; that removes any strong smell and keeps the broth clean.
