  1. Preheat the oven to 375°F. Butter a 2-quart soufflé dish and dust it with the Parmesan.
  2. Melt the butter, stir in the flour, and whisk in the milk; simmer 2 minutes until thick.
  3. Off the heat, beat in the yolks, Gruyère, salt, and nutmeg.
  4. Whip the egg whites with the cream of tartar to firm, glossy peaks.
  5. Fold one third of the whites into the cheese base, then fold in the rest gently.
  6. Pour into the dish and bake 30 to 35 minutes, until puffed and deep golden. Serve at once.
