Collard greens simmered long and slow with smoked turkey or ham hock until deeply tender and richly seasoned.

Step by stepInstructions

  1. Cook the ham hock in a large pot with the broth, onion, garlic, pepper, and red pepper flakes; simmer 30 minutes.
  2. Add the collard greens in batches, stirring until they wilt.
  3. Simmer 1 hour, stirring occasionally, until the greens are very tender.
  4. Season with salt and vinegar (and sugar if you like it balanced), simmer 15 minutes more.
  5. Serve the greens with some pot liquor and cornbread.

💡 Chef tips & storage

Taste the pot liquor — it should be rich and seasoned. The longer collards cook, the better they get; some cooks go 2+ hours.
