Bell peppers filled with a savory mix of rice, black beans, corn, and cheese, baked until tender.

Peppers, Southwest style

Colorful bell peppers packed with a smoky rice-and-bean filling and topped with melty cheese — a dinner that looks as good as it tastes.

Step by stepInstructions

  1. Preheat the oven to 375°F. Blanch the peppers in boiling water 3 minutes; drain.
  2. Heat the oil in a skillet and cook the onion until soft; add the garlic, cumin, and chili powder and cook 1 minute.
  3. Stir in the rice, beans, corn, tomatoes, and salt; cook 3 minutes. Remove from heat and fold in 1 cup of the cheese and the cilantro.
  4. Stuff the peppers and stand them in a baking dish; top with the remaining cheese.
  5. Bake 25-30 minutes until the peppers are tender and the cheese is golden. Serve with salsa and sour cream.

💡 Chef tips & storage

Blanching softens the peppers so they finish in the oven in time. Any leftover filling is great as a burrito bowl.
