Dense, buttery and jeweled with dried fruit and almonds, Stollen is the great Christmas bread of Germany. Its folded shape is meant to recall the Christ child in swaddling clothes, and its snowdrift of powdered sugar makes every winter table look festive.

Baked weeks before the holiday and aged with care, it’s served in thin slices with coffee or mulled wine. The flavor deepens daily — if you can resist it that long.

Step by stepInstructions

  1. Dissolve the yeast in the warm milk with a pinch of sugar and let stand 10 minutes.
  2. Mix the flour, sugar and salt. Add the yeast mixture, softened butter and eggs, and knead into a soft dough. Knead in the cinnamon, raisins, peel and almonds.
  3. Cover and rise 1 1/2 hours until doubled.
  4. Roll the dough out to a 10x12-inch oval. Shape the marzipan into a log and press it into the center.
  5. Fold one side of the dough over the marzipan, then fold the other side over the top, pinching the ends — the classic Stollen shape.
  6. Place on a baking sheet, cover and rise 45 minutes.
  7. Bake at 350°F for 45–55 minutes until deep golden and hollow-sounding when tapped.
  8. Brush the hot Stollen with melted butter and dust generously with powdered sugar. Cool completely before slicing.

💡 Chef tips & storage

Brush with butter and dust with sugar twice for a proper snow-white crust. Wrap tightly and let it rest a day or two before cutting — the flavors need time to marry.
