Tahitian Po'e

Po’e is the dessert of every Tahitian feast: ripe bananas (or papaya, mango or pumpkin) mashed with cassava flour into a soft dough, baked until it turns a deep rose-gold and glossy. It is served at birthdays, weddings and Sundays after church.

The texture is uniquely luscious — firm enough to slice, soft enough to melt, with intense natural fruit sweetness. Always serve it warm with cold coconut cream poured over.

Step by stepInstructions

  1. Preheat the oven to 350°F and grease a 9-inch baking dish with the melted butter.
  2. Mash the bananas until smooth. Stir in the cassava flour, sugar, salt and vanilla until a soft dough forms.
  3. Press the mixture evenly into the dish. Smooth the top with a wet spatula.
  4. Bake for 40-50 minutes, until set, glossy and deep golden at the edges.
  5. Cool for 10 minutes, cut into squares and serve warm, drizzled with coconut cream.

💡 Chef tips & storage

Riper bananas mean less sugar needed and a sweeter, more intense po'e. The pudding will firm up as it cools; reheat gently to restore its softness.
