Tahitian Poisson Cru

Poisson cru (‘raw fish’ in French) is Tahiti’s national dish, served everywhere from beachside snack bars to Sunday family tables. Fresh tuna is marinated in lime juice, then folded through coconut milk with cucumber, tomato and onion — a dish that captures the lagoons of the islands in a bowl.

The coconut milk turns a beautiful pink as it mingles with the citrus, and the result is creamy, tangy and impossibly fresh. Serve well chilled with a cold beer or fresh lime soda.

Step by stepInstructions

  1. Toss the tuna with the lime juice in a glass bowl; refrigerate for 15-20 minutes, stirring once.
  2. Drain off most of the lime juice.
  3. Add the coconut milk, cucumber, tomato, onion, carrot (if using), salt and a few grinds of pepper.
  4. Fold gently, taste, and chill for 10 minutes before serving cold.

💡 Chef tips & storage

In Tahiti the marinating time is short, so the tuna stays ruby-red and silky. Use full-fat coconut milk — light versions make a watery dressing.
