Tahiti grows some of the world’s finest vanilla, and French-trained chefs on the island were the first to pair it with the plump shrimp raised in Polynesian ponds. The combination — floral vanilla, sweet shrimp, butter, and a hit of rum — became a signature of upscale island restaurants and gradually made its way into home kitchens.
What makes it great is how quickly a few luxurious ingredients become something extraordinary: the vanilla perfumes the butter, the rum flames and deepens the sauce, and the lime cuts through with a final bright note. Served with crusty bread to soak up every drop, it is the starter that makes a dinner feel like a celebration.
