Taktouka is the smoky pepper salad that sits on Moroccan tables the way salsa sits on a Mexican one. Peppers are charred until blackened, peeled, and simmered with grated tomatoes, garlic, and cumin until the whole pan turns soft and jammy. It is served as a salad, a spread, or a topping for eggs and grilled meat, and it disappears fast.

The charring gives the peppers a gentle smoke that lingers through the sweet, concentrated tomatoes, and cumin ties it all together. Step by stepInstructions

  1. Roast the peppers whole under the broiler, turning often, until charred all over, about 15 minutes. Steam in a covered bowl for 10 minutes, then peel, seed, and dice them.
  2. Heat the olive oil in a skillet and cook the garlic until fragrant, about 1 minute.
  3. Add the grated tomatoes, cumin, paprika, salt, and cayenne and cook until the tomatoes thicken, about 10 minutes.
  4. Stir in the diced peppers and cook 10 minutes more, until the mixture is soft and jammy.
  5. Finish with the cilantro and serve warm or at room temperature with bread.
