Tapas variadas is a sharing spread of small plates: olives, Manchego, serrano ham, patatas bravas, marinated anchovies, and more, arranged for grazing. The beauty is variety — a little of everything, meant to be passed around.

Tapas culture is about conversation as much as food: small bites, cold drinks, and slow evenings with friends. Build your spread from your favorites and keep portions small so everyone can taste everything.

Step by stepInstructions

  1. Arrange small plates, boards, or one large platter with plenty of room between items.
  2. Group the cheeses and cured meats on one board, folding the ham into loose ribbons.
  3. Serve the patatas bravas hot in a small bowl, the tortilla cubes at room temperature, and the peppers and boquerones in their own dishes.
  4. Fill small bowls with the olives and drizzle the bread with olive oil and flaky salt.
  5. Add lemon wedges for squeezing over the anchovies and potatoes.
  6. Set everything out together so guests can graze, and keep the wine or beer flowing.

💡 Chef tips & storage

Contrast is everything: salty ham against creamy cheese, crisp potatoes against silky anchovies. Keep cold items cold and serve the fried ones last, straight from the pan.
