Step by stepInstructions

  1. Heat the oven to 375°F (190°C) and grease a 9x13-inch dish.
  2. Brown the beef with the onion, about 6 minutes. Stir in the taco seasoning, beans, corn, and tomatoes. Simmer 5 minutes.
  3. Spread the beef mixture in the dish and top with 1 cup of the cheese.
  4. Pour the prepared cornbread batter over the top.
  5. Bake 30 minutes, sprinkle with the remaining cheese, and bake 5 minutes more. Rest 10 minutes and garnish with cilantro.

💡 Chef tips & storage

Top the cornbread with a little extra cheese for the last 5 minutes of baking. Let the casserole rest 10 minutes before serving so it slices cleanly.
