Toad in the hole is a beloved British family supper, endlessly comforting and always a little theatrical when it comes out of the oven. Serve it with onion gravy and plenty of vegetables to balance the richness.

  1. Whisk the flour and salt, then beat in the eggs and milk until you have a smooth batter. Cover and rest at room temperature 30 minutes.
  2. Heat the oven to 425°F. Pour the oil into a 9x13-inch baking dish and add the sausages; roast 10 minutes, turning once, until browned.
  3. Carefully pour the batter around the sausages (not over them) and scatter with thyme.
  4. Bake without opening the oven until the pudding is dramatically puffed and deep golden, 30-35 minutes.
  5. Serve immediately — the puff will sink as it cools — with hot onion gravy poured over.

💡 Chef tips & storage

Don't open the oven while it bakes, or the pudding will collapse. Resting the batter beforehand helps it rise tall and stay crisp.
