Toast Skagen

Toast Skagen is Sweden’s elegant open-faced shrimp sandwich: a buttery toast piled with cold shrimp salad bound by mayonnaise, sour cream and dill, with a spoonful of fish roe on top. Bright, briny and utterly refined.

Named for the Skagen fishing town at Denmark’s northern tip, it is a classic starter at Swedish parties and a staple of midsummer. Serve it chilled, with lemon to squeeze over, and toast the bread just before topping so it stays crisp.

Step by stepInstructions

  1. Coarsely chop the shrimp and mix with the mayonnaise, sour cream, dill, red onion, lemon zest and juice; season with salt and white pepper.
  2. Chill the shrimp salad for 15-30 minutes to let the flavors meld.
  3. Toast the bread in butter in a skillet until golden on both sides.
  4. Pile the chilled shrimp salad onto the warm toasts.
  5. Top each with a spoonful of roe and a dill sprig, and serve immediately with lemon wedges.

💡 Chef tips & storage

Keep the shrimp salad very cold and the toast warm — the contrast is the point. Toast at the last minute so the bread stays crisp.
