The lamb turns meltingly tender, and the sauce thickens around it, catching a warm hint of cinnamon and bay that lifts the tomatoes into something more. Step by stepInstructions

  1. Heat the oil in a large heavy pot over medium-high heat and brown the lamb in batches until golden on all sides, about 6 minutes per batch. Set aside.
  2. In the same pot, cook the onions until soft and lightly golden, about 8 minutes. Add the garlic and stir 1 minute.
  3. Return the lamb with the tomatoes, tomato paste, cinnamon stick, bay leaves, sugar, salt, pepper, and water.
  4. Bring to a boil, then reduce to a very low simmer. Cover and cook for 1 1/2 hours, stirring occasionally.
  5. If using potatoes, add them now and simmer 30 minutes more, until the lamb is fork-tender and the sauce is thick and glossy.
  6. Taste and adjust the salt and sweetness, then scatter with parsley and serve with rice or mashed potato.
