Ika mo lolo is one of the oldest and simplest dishes in the Tongan kitchen: fresh fish cooked gently in coconut cream with onion and a squeeze of lime. In the days before refrigeration it was the way to use the day’s catch immediately, and the coconut cream kept the fish moist and sweet. It remains the dish that shows off Tonga’s two greatest gifts — the reef and the coconut palm.
