Manioke, or cassava, is a cornerstone of the Tongan diet, boiled, baked, or fried and eaten with everything. The most traditional way is also the simplest: boiled until soft, then dipped into sweetened coconut cream. It is the side dish at every Tongan feast and the snack at every grandmother’s house, loved for its creamy, starchy heart.

What makes it great: tender cassava with a subtle sweetness, made luxurious by a dip of sweet coconut cream. It is effortless, vegan, and endlessly comforting — and it pairs beautifully with any meat, fish, or curry on the table.

Step by stepInstructions

  1. Cut the peeled cassava into 3-inch lengths, then halve any thick pieces.
  2. Place the cassava in a pot, cover with water, add a pinch of salt, and boil for 25-35 minutes, until tender and a knife slides in easily.
  3. Drain well and keep warm.
  4. In a small saucepan, warm the coconut cream with the sugar, salt, water, and vanilla if using, stirring until the sugar dissolves.
  5. Serve the cassava warm with the sweet coconut cream in a bowl for dipping, or poured over the top.
