Often served as a holiday first course, it’s a celebration of homemade craft. The broth is the star, so use the best chicken stock you can find — and don’t skip the grated Parmesan at the table.

Step by stepInstructions

  1. Make the pasta dough from the flour, eggs, and salt; knead until smooth, wrap, and rest 30 minutes.
  2. Make the filling: mix the pork, prosciutto, Parmesan, egg, nutmeg, and pepper.
  3. Roll the dough thin and cut it into 1 1/2-inch squares.
  4. Place a small spoonful of filling on each square, fold into a triangle, press out the air, and pinch the two corners together to form a ring.
  5. Bring the broth to a gentle simmer and cook the tortellini directly in it until they float and are tender, about 5-6 minutes.
  6. Ladle the broth and tortellini into bowls; finish with Parmesan and parsley.
