Trdelník — the Czech chimney cake — is a sweet yeast pastry wrapped around a wooden spit, rolled in cinnamon sugar, and roasted until its crust caramelizes into a fragrant, crackly shell. Warm and chewy inside, it’s the signature treat of Prague’s old town streets.

Skewers of trdelník rotate over glowing coals at market stalls throughout the Czech Republic and Slovakia, filling the air with cinnamon and butter. Baked at home and pulled hot off the mold, it’s a wonderful project — and a genuinely impressive one.

Step by stepInstructions

  1. Dissolve the yeast and 1 tsp sugar in the warm milk and let it foam for 10 minutes.
  2. Mix the flour, remaining sugar, and salt. Add the yeast mixture, egg, and melted butter, and knead into a smooth dough. Cover and let rise until doubled, about 1 hour.
  3. Divide the dough into 6 pieces and roll each into a rope about 20 inches long.
  4. Brush greased chimney-cake molds with melted butter and wind each rope around a mold in an overlapping spiral.
  5. Brush with butter, then roll in the cinnamon-sugar mixture (with nuts if using).
  6. Roast over medium coals or bake at 375°F, turning frequently, for 15-20 minutes until glossy and deep golden. Slide off the molds while warm.

💡 Chef tips & storage

Rotate the cakes constantly during roasting so the sugar caramelizes evenly without burning. Serve immediately, still warm, for the full market-stall effect.
