The light cake is soaked in a bath of three milks — evaporated, sweetened condensed, and cream — until it turns luxuriously moist, then crowned with whipped cream. It is sweet, milky, and utterly beloved across Latin America, Costa Rica included.

Step by stepInstructions

  1. Preheat the oven to 350°F and butter a 9x13-inch baking dish.
  2. Beat the egg whites with half the sugar until stiff peaks form. In another bowl, beat the yolks with the remaining sugar until pale, then beat in the milk and vanilla.
  3. Fold the flour, baking powder, and salt into the yolk mixture, then fold in the beaten whites gently, a third at a time.
  4. Pour the batter into the dish and bake for twenty-five to thirty minutes, until a toothpick comes out clean. Cool completely.
  5. Whisk together the evaporated milk, condensed milk, and cream, and pour the mixture slowly over the cooled cake, letting it soak in.
  6. Chill for at least two hours, or overnight. Whip the topping cream with the sugar and vanilla to soft peaks, spread it over the cake, and chill until serving.
