The texture is silky and light, thinner than Western porridge, with a clean, slightly sour note that is surprisingly refreshing. Sweetened with a little sugar and swirled with milk, it becomes a balanced breakfast, tangy, creamy, and gently filling. Some families add a pinch of cardamom or a swirl of coconut milk for richness. Step by stepInstructions

  1. The night before, whisk the millet flour with 1 cup of the water and the yogurt in a bowl. Cover loosely and leave at room temperature overnight, about 8 hours.
  2. In the morning, stir the fermented mixture until smooth.
  3. In a pot, bring the remaining 2 cups water to a simmer.
  4. Whisk the fermented flour mixture into the hot water, stirring constantly to prevent lumps.
  5. Cook over medium-low heat, stirring, until the porridge thickens and turns glossy, about 10 to 12 minutes.
  6. Stir in the milk, sugar, salt, and cardamom, and simmer 3 minutes more.
  7. Serve hot in bowls with a splash of extra milk.

💡 Chef tips & storage

The overnight ferment is what gives uji its signature tang; in a hurry, skip it and stir in a spoonful of plain yogurt just before serving. Stir constantly while cooking to keep the porridge silky.
