Vlaamse Frieten

Vlaamse frieten — Belgian fries — are the gold standard of fried potatoes: thick-cut, creamy inside, and impossibly crisp outside thanks to a double fry in beef tallow or peanut oil. They are served with mayonnaise, never ketchup.

In Belgium, fries are a serious craft, sold from freestanding friteries in paper cones. The two-stage frying — a gentle first cook, then a fierce second — is what makes them so good.

Step by stepInstructions

  1. Peel the potatoes and cut into thick fries, about 1/2 inch (1.3 cm) wide.
  2. Soak in cold water (with the vinegar if using) for 30 minutes; rinse and pat very dry.
  3. Heat the oil to 300°F (150°C). Fry the fries in batches for 5–6 minutes — they should cook through without coloring. Drain and rest for 10 minutes.
  4. Raise the oil to 375°F (190°C) and fry again in batches for 3–4 minutes until golden and crisp.
  5. Drain on paper towels and season immediately with salt.
  6. Serve in a paper cone with a generous dollop of mayonnaise.

The double fry is non-negotiable — it is what gives the creamy center and crisp shell. Never crowd the pan, or the temperature drops.
