Vori vori (from the Guaraní word for a little ball) is one of Paraguay’s most beloved national dishes, born in the countryside and now served everywhere from humble kitchens to Asunción restaurants. The tiny dumplings are traditionally made with harina de maíz and queso paraguayo, which give the broth its signature sunny color and creamy finish.

Each vori is small — about the size of a marble — and cooks directly in the bubbling broth, puffing up and drinking in the chicken flavor. The result is a silky, slightly thickened soup with tender chicken, sweet vegetables, and soft cheesy dumplings in every single spoonful.

Step by stepInstructions

  1. Simmer the chicken with the onion, garlic, and carrot in the broth for 35 to 40 minutes, skimming the foam, until the chicken is tender.
  2. For the vori, mix the cornmeal, grated cheese, egg, milk, salt, and annatto into a soft dough and roll it into about 24 small 1/2-inch balls.
  3. Lift out the chicken, shred the meat, discard the bones, and return the meat to the pot.
  4. Drop the vori into the gently boiling broth, reduce the heat, and simmer for 10 to 12 minutes until they float and are cooked through.
  5. Taste and adjust the seasoning, ladle into bowls, and shower with sliced scallions; serve with a wedge of fresh cheese if you like.

Roll the vori small — they swell as they cook. Leftovers keep 3 days refrigerated; the dumplings soften further, so reheat gently and add extra broth if needed.
