Zeeuwse Bolus

Zeeuwse bolussen are sticky, glossy cinnamon-sugar rolls from the Dutch province of Zeeland: soft enriched dough twisted into knots, baked, then rolled in a thick layer of brown sugar and cinnamon. The sugar melts into a caramelized shell.

They are a Zeeland specialty, served at breakfast with coffee or tea, preferably still warm. Eat them over a plate — the sugary coating is gloriously messy.

Step by stepInstructions

  1. Mix the flour, yeast, sugar, and salt; add the milk, butter, and egg, and knead into a smooth, soft dough.
  2. Cover and let rise for 1 hour, until doubled.
  3. Punch down and divide into 8 pieces; roll each into a rope about 8 inches (20 cm) long.
  4. Twist or coil each rope into a knot, arrange on a parchment-lined tray, and let rise for 30 minutes.
  5. Bake at 400°F (200°C) for 12–15 minutes, until golden.
  6. Brush the hot rolls with melted butter, then roll generously in the brown sugar–cinnamon mixture until thickly coated.

💡 Chef tips & storage

Roll the bolussen in the sugar while they are still hot so it melts into a sticky shell. Store in a closed tin — they stay moist for days.
