  1. Cook the noodles according to the package directions, drain, and set aside.
  2. Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger and cook 2 minutes until fragrant.
  3. Add the turmeric, cumin, and chili flakes and stir 30 seconds. Pour in the broth and bring to a boil.
  4. Add the carrot, cabbage, and tomato and simmer 8 minutes, until the vegetables are tender.
  5. Stir in the soy sauce and the cooked noodles and simmer 2 more minutes.
  6. Ladle into bowls and top with cilantro. Serve hot.

Any noodle works here — fresh chow mein noodles are closest to the street version. Taste before salting, since the broth and soy sauce may already be salty.
