  1. Heat the oil in a heavy pot over medium heat. Add the onion and cook, stirring, until deep golden brown, 12 to 15 minutes.
  2. Add the garlic and ginger and cook 1 minute. Stir in the turmeric, cumin, coriander, and chili powder and cook 30 seconds.
  3. Add the tomatoes and cook 5 minutes, mashing them into the spices until the oil glistens on top.
  4. Add the goat meat and salt and cook 10 minutes, turning, until the pieces are well coated and lightly browned.
  5. Pour in the water, cover, and simmer over low heat 1 hour 15 minutes, until the meat is fork-tender.
  6. Uncover and simmer 10 minutes to concentrate the gravy. Stir in the garam masala, scatter with cilantro, and serve hot.

💡 Chef tips & storage

Goat needs long, low cooking; if using lamb, start checking at the 45-minute mark. The gravy should be thick enough to coat the back of a spoon.
