Bara are savory pancakes of soaked and ground black lentils, fried until the edges turn dark and crackly. They are festival food in the Kathmandu Valley, pressed out by hand at Newari celebrations and often topped with a smear of egg or served alongside spicy choyla. The lentil batter needs no flour and no leavening — just patience with the soaking and a steady hand at the pan. They are the snack that holds a feast together.

Crisp lentil cakes with a crackling edge

The outside is deeply browned and almost crisp, giving way to a soft, airy center with a mild, nutty flavor. Ginger, garlic, and a whisper of cumin keep them savory, and the contrast of crunchy rim and tender middle is what makes them so hard to stop eating. Warm from the pan, with a little choyla on the side, they are irresistible. Make extra — they rarely survive to the next day.

Step by stepInstructions

  1. Drain the soaked lentils and grind them in a blender with the water into a thick, smooth paste. It should be spreadable, like thick hummus.
  2. Stir in the cumin, turmeric, ginger, garlic, chili, and salt. The batter should hold its shape in a spoon.
  3. Heat a nonstick skillet over medium heat and add a little oil.
  4. Drop spoonfuls of batter and flatten each into a 3-inch round about 1/4 inch thick.
  5. If you like, crack a little egg over each patty and sprinkle with onion. Cook 4 minutes, until the bottom is deeply browned and crisp, then flip and cook 4 minutes more.
  6. Serve hot with choyla or tomato achar.

💡 Chef tips & storage

Soak the lentils at least 4 hours, or overnight, or they will not grind smooth. The patties should sizzle gently; if they brown too fast, lower the heat.
