Zhong dumplings are a Chengdu institution, named for the snack shop that has served them since the early 1900s. Unlike northern dumplings, which lean on vinegar, these are drenched in a sweetened soy and chili oil sauce that makes them unmistakably Sichuan. The original shop still draws lines of regulars, home cooks have spent a century trying to copy the sauce, and a proper bowl of Zhong dumplings is a rite of passage for visitors to Chengdu.

The filling is simple, just pork and a whisper of ginger, but the sauce is the point: glossy, sweet, garlicky, and only mildly spicy. The dumplings themselves are small and neat, with thin wrappers that turn slightly translucent where the sauce soaks through. They are served as a snack or appetizer, though most people admit to finishing a plate as a meal, spooning extra sauce over each dumpling as they eat.

Step by stepInstructions

  1. Mix the pork with the scallions, ginger, wine, sesame oil, white pepper, egg, and salt, and stir in one direction until sticky.
  2. Place a small spoonful of filling in the center of each wrapper, wet the edges, and fold into a half-moon, pressing out any air.
  3. Whisk the soy sauce, sugar, chili oil, vinegar, and garlic in a bowl for the sauce.
  4. Boil the dumplings in a large pot of water; they are done when they float and the wrappers look translucent, about 4 to 5 minutes.
  5. Scoop the dumplings into bowls, spoon the sauce over them, and serve hot.

💡 Chef tips & storage

Buy round dumpling wrappers to save time, and keep them covered with a damp towel while you work so they do not dry out. The sauce can be doubled and kept in the fridge for a week.
