Step by stepInstructions

  1. Heat the coconut oil in a pot over medium heat. Add the mustard seeds and cook until they pop, about 30 seconds.
  2. Add the green chilies, curry leaves, and pandan and stir for 1 minute.
  3. Add the pineapple, turmeric, chili powder, salt, and sugar and toss to coat. Cook for 3 minutes.
  4. Pour in the coconut milk and water and bring to a gentle simmer. Cover and cook over low heat for 10 minutes, until the pineapple is tender.
  5. Uncover and simmer for 5 minutes more, until the sauce is slightly thickened.
  6. Serve warm or at room temperature with rice and curries.

Use a ripe but still firm pineapple; overripe fruit turns mushy and too sweet. For a deeper flavor, let the curry sit for an hour before serving, then reheat gently.
