New Zealand Kumara Chips

Kumara, the sweet potato, has been grown in New Zealand by Māori for centuries, having arrived with Pacific ancestors hundreds of years before Europeans. Today kumara chips are a proud alternative to standard fries at every Kiwi takeaway and café.

Properly made, kumara chips are sweet, crisp-edged, and meltingly soft inside. A little salt and maybe a dip of aioli or tomato sauce is all they need.

Step by stepInstructions

  1. Preheat the oven to 425°F.
  2. Cut the kumara into chunky fries — no need to peel.
  3. Toss with the oil, salt, paprika, and pepper on a large baking tray.
  4. Roast for 30–35 minutes, turning once, until golden and crisp at the edges.
  5. Serve immediately with aioli or tomato sauce.

💡 Chef tips & storage

Don't overcrowd the tray or the chips steam instead of crisping. Kumara browns faster than potato — keep an eye on them in the last 10 minutes.
