Step by stepInstructions

  1. Combine the fish and lime juice in a bowl. Chill 20-25 minutes until the fish turns opaque, stirring once.
  2. Drain most of the lime juice, leaving the fish moist.
  3. Fold in the tomato, onion, jalapeño, cilantro, avocado, cucumber, and salt.
  4. Chill 10 minutes more.
  5. Serve with tortilla chips.

Use the freshest fish you can find and cut it into small, even pieces so it cures evenly. Don't skip the chilling time — the lime needs 20 minutes to work.
