Step by stepInstructions

  1. Preheat the grill to medium-high.
  2. Mix the butter, garlic, lemon juice, parsley, red pepper flakes, and salt into a compound butter.
  3. Place the oysters flat-side up on the grill and cook 3-5 minutes until the shells pop slightly.
  4. Remove the top shells, loosen the oysters, and top each with a spoonful of the garlic butter.
  5. Grill 1 minute more until the butter melts, then serve immediately with lemon wedges.

💡 Chef tips & storage

Discard any oyster that doesn't open. The compound butter can be made ahead — keep it chilled until you need it.
