Firm green tomatoes breaded in cornmeal and fried crisp, served with a tangy rémoulade.

Step by stepInstructions

  1. Whisk the cornmeal, flour, garlic powder, paprika, cayenne, salt, and pepper. Whisk the buttermilk and egg in a separate bowl.
  2. Dip each tomato slice in the buttermilk, then dredge in the cornmeal mixture.
  3. Heat 1/2 inch of oil in a skillet to 365°F (185°C).
  4. Fry the tomatoes 2-3 minutes per side until golden and crisp. Drain on a rack.
  5. Whisk the mayonnaise, Creole mustard, hot sauce, and lemon juice for the rémoulade. Serve the tomatoes with the rémoulade.

💡 Chef tips & storage

Use firm, unripe green tomatoes and slice them about 1/4 inch thick. Drain on a rack, not paper towels, so the crust stays crisp.
