Hummus

Hummus is the heart of every Lebanese mezze, served with warm pita at nearly every table. Every family has their own version, but the essentials never change: chickpeas, tahini, lemon, and garlic whirled until velvety smooth. It is the dish guests always ask for, the one that turns a simple spread of salads into a feast.

Velvet-smooth chickpeas with a bright lemony tang

The secret is patience — letting the tahini and lemon whip into a pale, airy paste before the chickpeas ever go in, then streaming in ice water until the dip turns light and spoonable. Simmering the chickpeas with a pinch of baking soda makes them tender enough to blend into pure silk. It tastes nutty, garlicky, and bright, with a finish of good olive oil and a dusting of paprika or sumac. Serve it warm or at room temperature with torn pita, and watch it disappear long before the meal begins.

Step by stepInstructions

  1. Put the chickpeas in a small saucepan, cover with water, and stir in the baking soda. Bring to a simmer and cook until the chickpeas are very soft, about 20 minutes. Drain and let cool slightly.
  2. In a food processor, pulse the tahini, lemon juice, garlic, salt, and cumin until the mixture lightens in color and looks whipped, about 1 minute.
  3. Add the warm chickpeas and process for 2 to 3 minutes, scraping down the sides, until completely smooth.
  4. With the machine running, stream in the ice water, 1 tablespoon at a time, until the hummus is creamy and loose enough to ripple when spooned.
  5. Taste and adjust the salt and lemon. Spread onto a plate, swirl with the back of a spoon, and drizzle generously with olive oil.
  6. Garnish with paprika or sumac and serve with warm pita.

💡 Chef tips & storage

Simmering the chickpeas with a pinch of baking soda softens them so the hummus blends silky-smooth. Leftovers keep for 4 days, but loosen them with a spoonful of water or olive oil before serving.
