  1. Heat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Brown the sausage in a skillet, breaking it up, about 5 minutes. Remove and set aside.
  3. Melt the butter in the same skillet and cook the onion, celery, and bell pepper until soft, 5 minutes. Add the garlic.
  4. Combine the cornbread, sausage, vegetables, stock, eggs, Cajun seasoning, sage, and cayenne in a large bowl. Season with salt and pepper.
  5. Spread into the dish and bake 40 minutes until golden and set.
