A hearty, rustic soup of white beans and smoky ham simmered low and slow until thick and comforting.

Use up the holiday ham

The day after a big ham dinner, this pot of beans and broth becomes the most comforting soup in the Midwest kitchen.

Step by stepInstructions

  1. Soak the beans overnight, then drain.
  2. Heat the oil in a large pot and cook the onion, carrots, and celery until soft, about 6 minutes; add the garlic and cook 1 minute.
  3. Add the beans, ham bone or hocks, broth, thyme, bay leaves, and pepper. Bring to a boil, then simmer 1 1/2-2 hours until the beans are tender.
  4. Remove the ham bone, pull off any meat, chop it, and return it to the pot. Discard the bone.
  5. Simmer 15 minutes more until thick, season, and finish with parsley.

💡 Chef tips & storage

The ham bone is the flavor engine — don't skip it. If the soup gets too thick, thin it with a little broth or water.
