Nothing says Midwest summer like corn straight off the grill — steam-puffed kernels, charred husk, and a thick slick of butter.

Step by stepInstructions

  1. Pull back the husks (don't remove them), strip away the silk, and fold the husks back over the corn. Soak the ears in cold water 15 minutes.
  2. Preheat the grill to medium-high.
  3. Grill the corn 12-15 minutes, turning every few minutes, until the kernels are tender and the husks are charred.
  4. Mix the butter with the salt, pepper, and paprika.
  5. Pull back the husks and slather the corn generously with the seasoned butter. Sprinkle with herbs and serve hot.

💡 Chef tips & storage

Soaking keeps the husks from burning and steams the kernels. For charred flavor, strip the husks and grill the bare ears directly for the last 2 minutes.
